Lull
before the storm.
The
tables were setup and ready to go waiting for the onslaught of over
3,600 dinners that would be served that day.
Each
table setup could accomodate 48 people, served family style. We
kept bringing out the food until you were full. If you went home
hungry, it wasn't our fault.

Serving
it up.
The
kitchen crew at the left of the picture is readying platters
of sausage and bowls of mashed potatoes, saurkraut, green beans,
baked apples, etc. for the servers at the right.

Patrons
are allowed to eat their fill without being rushed out the door.

Clean
up and reset the tables.
The
man at the left front is rolling up the soiled table covering along
with all the scraps left on the table. The other 2 men are hot on
his heels setting up for the next group. They are rolling out a
new table covering.
Right
behind them will come the crew to set out clean plates and table
service for the next group of 48 people that will be seated.

Meanwhile...
there
are tons (literally) of sausage to cook, potatoes to mash, etc.,
cooking it as fresh as we can make it.

Even
our pastor, Fr. Jeff Knight got into the swing of things. He helped
to serve tables all day.
As
Father put it, "Just call me Fr. Jeff Boy-Ar-Dee". Pass
the ravioli!
